One of the classics of the Salon, now celebrating its 31st edition this year. Six cutters compete in skill before a panel of professionals who assess criteria such as: the thickness and size of the slice, the straightness of the cut, the presentation of the plate, cleanliness, and speed, among others. Additionally, they calculate a 100-gram portion, demonstrate their knowledge of ham culture by answering a related question, and present a dish featuring each part of the product: Maza, Babilla, and Punta. Contestants have an hour and a half to showcase their abilities and become the Best Ham Cutter in Spain.
At the awards ceremony following the competition, the winner receives an Iberian cebo ham with the Dehesa de Extremadura PDO, a prize of €1,000, as well as a trophy and a diploma accrediting them as Best Ham Cutter in Spain 2025. The runner-up receives a ham stand and a diploma, while the third-placed contestant is awarded a set of knives. Meanwhile, in the Best Creative/Artistic Dish category, the winner is presented with a diploma and a Cebo Campo PDO ham.
