This capacity is directly linked to the total availability of acorns, which determines the natural resources needed to ensure proper feeding during the montanera period Total acorn production<\/strong>, which in turn depends on natural factors such as climate and the annual rainfall pattern. For this reason, an average ratio is applied, ranging between ranging between 3 and 4 hectares per pig<\/strong>, adjusted according to the yield of each farm. This control model ensures the sustainability of the production system, the availability of food during the montanera, and, ultimately, the quality of the final product.<\/p>\n\n\n\n

During the 2023\u20132024 season, the following have been certified 18.216 pigs<\/strong>, all of them raised freely in Extremaduran *dehesas* and fed exclusively on acorns and natural grasses. This figure reflects precise planning in a year marked by a limited availability of acorns<\/strong>, a direct consequence of climatic conditions. According to the data collected, the accumulated rainfall between October and August in Extremadura amounted to 537.4 liters per square meter<\/strong>, a moderate figure that has required adjusting the authorized livestock density on each farm to ensure food availability and animal welfare during the montanera. These data come from the report presented by the Territorial Delegate of AEMET in Extremadura during the press conference marking the start of autumn 2024.<\/a>.<\/strong> This technical management is key to preserving both the sustainability of the ecosystem and the quality standards required by the PDO.<\/p>\n\n\n\n

The Protected Designation of Origin Dehesa de Extremadura only certifies 100% Iberian products.<\/strong>A unique breed, perfectly adapted to this ecosystem, whose genetic purity is certified from birth through rigorous genealogical control. Both parents must be registered as purebred animals in the Iberian Pig Stud Book. Although this verification is carried out by officially recognized entities, the technicians of the Denomination verify that each animal meets the morphological and age requirements established by the Quality Standard before the mandatory tagging.<\/strong>.
